
Potato pancakes with apple sauce

Ingredients
1 kg potatoes (floury cooking)
2 small onions
2 eggs
2 tablespoons flour
salt, pepper
sunflower oil or clarified butter for searing
applesauce

Cooking Method
Instructions
- Peel potatoes, wash and grate with a coarse grater.
- Peel onions and finely grate. Put the potatoes in a cloth and squeeze well. Then mix with eggs, flour, onions and a generous pinch of salt. Heat some clarified butter in a pan and add a large spoon of the potato mixture to the hot fat. Lightly press and fry on both sides until golden brown. If the edges turn slightly brown turn the cake.
- Remove and drain on a plate with kitchen paper. Serve warm with applesauce.
