Preparation

  1. Soak the breadcrumbs.
  2. Boil all the vegetables and discard the water.
  3. Once cooked, purée the potato and carrot.
  4. Add the previously boiled diced onion, chopped garlic, nutmeg, oil, egg whites and breadcrumbs to the puree.
  5. Form croquettes with the mixture and pass it in flour and breadcrumbs for coating.
  6. Place the croquettes on a baking tray, pour over the oil and bake in the oven at 200 degrees until golden brown.
  7. Additional information: To reduce protein content, replace regular low salt breadcrumbs with low-protein bread. Boiling the vegetables will reduce potassium content by approximately 50%.

Ingredients

  • 1 medium carrot (approximately 60g)
  • 50 g onion
  • 1 medium potato (approximately 200g)
  • 1 tablespoon of cooked peas (approximately 30g)
  • ½ glove of garlic
  • 2 egg whites (70g)
  • 100 g breadcrumbs from low salted bread (or from low-protein bread)
  • Flour and breadcrumbs for coating*
  • 1 tablespoon (10g) of olive oil for baking
