The onion, courgettes, chickpea and turmeric flan is a typical vegetarian dish with different variations, ideal for family lunches or dinners. It’s also used for packed lunches. It is rich in fibre, antioxidants, and vegetable protein and has a low glycemic index.
Ingredients
- 1 onion
- A clove of garlic
- A dried tomato
- 240 g boiled chickpeas
- 4 courgettes
- 40 g Parmigiano Reggiano cheese
- 60 g bread crumbs
- 2 eggs and 5 egg withes
- 40 g chickpea flour
- 20 g turmeric
- Extra virgin oil to taste
- Water to taste
- Pepper to taste
- A pinch of salt

Preparation
- Cut garlic and onion and fry them in a pan with oil over low heat for 5 min.
- Add the chickpeas, the dried tomato cut into small pieces and a pinch of pepper and cook another 5 min, covered with a lid. When cooked, turn off the heat and set aside.
- Cut the courgettes into cubes and add Parmigiano Reggiano cheese, bread crumbs, a pinch of salt and chickpea flour.
- Add the previously prepared mixture and mix.
- When the mixture is well homogeneous, season with turmeric.
- Finally, add eggs and mix well.
- Oil a baking sheet and pour in the dough, level with a spatula and place in a preheated oven for 30-40 min at 180°C.
- Once ready, let it cool for half an hour before tasting.
